Here at ‘I Should Coco’ we specialise in fine Hand Made Fresh Chocolates using local Cornish Cream, Honey and Fruit and as many other Local Ingredients as possible!

We only ever use Real Chocolate - that is, chocolate with 100% Cocoa Butter , a good cocoa content and natural Vanilla.

And we’re so proud of our product that we make all these lovely goodies by hand - right here in our Beautiful New Shop, in full view of all our customers !

We're a very small team here at I Should Coco, Kevin, Andrea, Lesley, Elaine and Danny, but we’re all working with a Passion to bring you something new and totally different - chocolates made with real chocolate (that is - chocolate made with 100% cocoa butter and a decent cocoa content) and fine fresh locally sourced ingredients.

We solemnly promise our scrummy fresh truffles are not packed full of preservatives and fillers, and haven’t been sitting around on a dusty shelf for months! Instead they’re freshly made to order - and have a shelf life of two weeks - so you can enjoy them at their best - the way they were meant to be.

A Chocolate Workshop is an Incredible Environment, so many New Thoughts and Creations Flourish amongst the Smells and Fillings.
But here at I Should Coco we have an Extra Advantage - St Ives itself is Inspirational! With the Fabulous Views of the Harbour and Lighthouse from our Workshop Window our Creative Spirits are always Alive and Attentive.

And with the help of our lovely local Artist Friends Becky Borman and Liz Hough we’ve managed to Capture some of that Magic on our Boxes and Bars.
In fact St Ives manages to Manifest Itself in Every Aspect of our work and a Wealth of Local Producers help to make our Chocolates Special providing Fabulous Local Honey, Clotted Cream, Raspberries, Strawberries, Plums, Cornish Sea Salt and Cornish Apple Brandy … we could go on….
